How would you do an in text citation when you are quoting another writer's quotation?

in a book written by Purcell, Catherine, Arrigo, Bruce A., I am quoting something that Jeffrey Dahmer said directly. But the person that wrote the book got this information from another source, which is showing up as (Schwartz, cited in Davis, 1998, p. 127). So how would I do the in-text, would I include the the cite where it originally came or all of them?

This is really messy because you are really citing a third generation quotation -- in other words, you are three degrees away from the original and you don't really want to do that because there is so much room for error to have worked it's way into the quotation by this point. Ideally you want to go back to the original and use it. The library will be happy to help you find the original source.

If you must quote a source citing from another source, the process is handled differently depending on whether you are citing in MLA or APA.

The format you would use is that you have to cite all of the previous references, using the appropriate format, so and example in MLA: Purcell & Arigo quote Jeffrey Dahmer _____ (p# qtd. in Schwartz p#, qtd. in Davis 127) -- and you'd need to get the page number (p#) for Schwarz. 

APA would be similar except where it says "qtd." put in "as cited".
